Quick Pickled Red Onions

Ingredients

  • 1 large red onion, thinly sliced

  • 1/2 cup red wine vinegar

  • 1/2 cup water

  • 2 tablespoons sugar (adjust to taste)

  • 1 tablespoon salt

  • Optional add-ins: a garlic clove, black peppercorns, chili flakes, or a bay leaf for extra flavor

Instructions

  1. Prep the onion: Peel and thinly slice the red onion into half-moons.

  2. Make the brine: In a small saucepan, combine vinegar, water, sugar, and salt. Heat gently, stirring until the sugar and salt dissolve. Remove from heat.

  3. Pack the jar: Place the sliced onions (and any optional flavorings) into a clean 32 ounce glass mason jar.

  4. Pour & pickle: Carefully pour the warm brine over the onions until they’re fully submerged.

  5. Cool & store: Let cool to room temperature, then cover and refrigerate.

Ready to enjoy in 30 minutes (though they taste even better after a few hours). Keep refrigerated for up to 2–3 weeks.
